Stewed Ontario rhubarb with a whisper of rose water. Bright, dairy-free, and sharp enough to wake up a heavy plate of dessert.

Maple & Birch opened on Mill Street in 2018. We started with one batch freezer, four flavours, and a list of three farms we trusted. We have since added eight more flavours and a second freezer. The list of farms has barely moved.
Our work is small on purpose. Cream lasts longer when it is respected. Fruit tastes more like itself when you do not freeze it for ten months. Maple is its own ingredient, not a sweetener.

An hour west of Ottawa. A heritage mill building on the river. Two parking lots within a one-minute walk and an espresso bar two doors down. Worth the drive.
